Ingredients

  • 1 can(s) (drained) Chickpeas in Water
  • 4 medium (raw) Egg, whole, raw
  • 2 teaspoons (level) Baking powder
  • 1 teaspoon (level) Vanilla Extract
  • 1 teaspoon (level) Salted Caramel Flavouring
  • 60 g Cacao powder
  • 12 g Milled Chia Seeds
  • 60 g Xylitol Natural Sweetener
  • Edible confectionary eyes (optional)

 

Icing

  • 100g Erythritol Powdered Natural Icing
  • Water
  • Food colouring (orange and black)

Instructions

  1. Add all ingredients to a blender and blend in to a smooth batter.
  2. Using an ice cream scoop as a measure, put 1 scoop each in to a cupcake mould.
  3. Bake in the oven at at gas mark 4/180°C/160°C electric fan oven for 20 mins.
  4. Allow to cool.
  5. Meanwhile add the erythritol powdered icing to a bowl and add 1tsp of water at a time until desired consistency.
  6. Divide in to 3 bowls and and a drop or two of orange food colouring to one of the bowls and black to the other.
  7. Add to a piping bag (1 bag per icing colour) and using a narrow smooth holed nozzle, pipe on your icing in any decorative way you like.  Add confectionery edible eyes for an additional 1 SmartPoint® for 2 eyes.
  8. Refrigerate for half an hour to set the icing.

NOTE: If using 100g of ordinary icing sugar instead of powdered sweetener, allow 2 extra SmartPoints® per cupcake.
