Wholewheat spaghetti Bolognese
With added veg, this family favourite is a tasty way to achieve your 5-a-day
Olive Oil 2 teaspoons
Onion(s) 1 medium, finely diced
Carrots, raw 2 medium, finely chopped
Extra Lean Pork Mince (5% fat), raw 400 g
Tinned Tomatoes 1 can(s), large, chopped, with basil
Courgette 2 medium, cut into 1 cm cubes
Wholewheat Pasta, dry 240 g, spaghetti
- Heat the oil in a large pan set over a medium-high heat. Add the onion and carrots and cook, stirring occasionally, for 3 minutes or until soft. Add the mince and cook for 4 minutes until browned.
- Add the chopped tomatoes and courgettes to the pan and bring to a boil. Reduce the heat to low and simmer for 45 minutes. Season well.
- Meanwhile, cook the spaghetti in boiling salted water to pack instructions. Drain, then toss the pasta through the Bolognese sauce. Divide between plates to serve.
