Tomato & mozzarella omelette
Egg, whole, raw 2 medium, raw
Skimmed Milk 1 tablespoon
Basil, fresh 1 leaf
Olive Oil 1 teaspoon
Tomato 1 large
Light Mozzarella 45 g
Rocket 1 portion
- Mix the eggs, milk and basil together, then season.
- Heat the oil in a frying pan, add the egg mixture and fry evenly for 3-4 minutes until set.
- Spread the tomato and mozzarella slices and some extra basil leaves over the omelette. Fold and season to taste. Serve with rocket on the side.
