Summer Berry Mess
Raspberries 100g, plus a handful of any other berries you like
Icing Sugar ¼ teaspoon
Lemon Juice, fresh ½ teaspoon
Meringue Nest 1 individual
0% fat natural Greek yogurt 200g
- In a mini food processor, whizz the 100g raspberries with the icing sugar and lemon juice, then press the mixture through a sieve. Gently stir this through the yogurt to create a ripple effect.
- Quarter the strawberries and put in a bowl with the extra raspberries and the blueberries, reserving a few to decorate. Break the meringue into small pieces.
- Assemble the dessert in a serving glass, layering the yogurt mixture, then fruit, then meringue. Decorate with the reserved berries and serve immediately.
