- Season and dress the rocket with half the lemon juice. Core and slice the apples into 16 wedges and toss with the remaining lemon juice. Arrange the prosciutto on a board and place a few rocket leaves and a wedge of apple on each. Tightly roll the prosciutto around each apple wedge, then drizzle over the olive oil and season with black pepper.
