McDonnells Slimmers vegetable curry

200g of McDonnells Curry Powder
900ml of water
1 large onion, chopped
2 small sweet potatoes, cut into cubes
1 fresh chili, chopped
1 tbsp. sunflower oil
1 small cauliflower, broken into florets
1 red pepper, diced
1 yellow pepper, diced
80g of broccoli florets
2 courgette, sliced
65g French beans, cut in half
80g peeled carrots, cut into batons
50g celery, sliced
100g of chickpeas
50g natural yogurt (optional)
1 bunch fresh coriander, chopped (optional)
Heat the vegetable oil fry the onions and chilies in medium heat for 5 mins in a large wok then add the remaining vegetable gradually and stir together.
Place the curry powder in a saucepan add in 900ml of water and bring to the boil and simmer for 5 mins.
Add in all vegetables, and simmer for 15-20minutes. Take care not to overcook the vegetables!
The addition of fat free natural yogurt to curry gives a marvelous creamy texture.
Serve with rice or naan breads remembering to add the additional SmartPoints.
