Easy fish stew
This wonderfully rich-tasting fish stew is great for sharing with friends.
Red onion(s) 2 medium, thinly sliced
Tinned Tomatoes 1 can(s), large
Fish Pie Mix 300 g, we used Sainsburys
Spinach 100 g, young leaf
Calorie controlled cooking spray 4 spray(s)
Garlic 2 clove(s), thinly sliced
Chilli flakes 1 teaspoons, level
Dried Mixed Herbs ½ teaspoons
Fish stock cube 1 cube(s)
- Set a large nonstick pan over a medium heat and mist with cooking spray. Fry the onions for 10 minutes until softened and starting to caramelise – add a splash of water if they start to stick to the pan. Add the garlic and cook for a further 1 minute.
- Add the chopped tomatoes, chilli flakes, dried mixed herbs and stock to the pan. Bring to the boil, then simmer for 20 minutes.
- Add the fish pie mix and spinach to the pan and stir gently to coat in the sauce. Season to taste. Gently simmer for 5 minutes until the fish is cooked through and just starting to flake and the spinach has wilted, then serve.
