Banana & peanut butter baked oats
Try out this recipe...it’s great for a quick breakfast!
Banana 1 medium
Porridge oats 40g
Baking powder ½ teaspoon level
Vanilla Extract ½ teaspoon level
Egg whites 2
Smooth Peanut Butter 1 teaspoons
Raspberries 1 portion
- Preheat the oven to 180°C, fan 160°C, gas mark 4. Cut the banana in half; mash one half with a fork and slice the other half into thin rounds.
- Combine the oats, baking powder and mashed banana in a bowl. Stir in the vanilla extract and egg whites.
- Pour the mixture into a 12 cm ramekin or ovenproof baking dish. Top with the banana slices and bake for 20 minutes or until golden and just firm.
- Serve topped with the raspberries and peanut butter.
